Chef serves up a passion for food at the Spring Inn

“For the love of food” is the reason why Adrian Brunswick has taken over the Spring Inn in Sulhamstead.

Mr Brunswick, 44, has been a chef all his working life and has now taken on this new venture.

He and wife Susie, 44, have owned the Bull at Barkham for eight years and bought the Spring Inn in January when the previous owner went into voluntary liquidation in the depth of the recession.

The couple began an extensive refurbishment gutting the interior to produce a “cleaner, brighter feeling” inside. Now they have an à la carte restaurant upstairs and serve up-market bar food.

Mr Brunswick said: “I have worked as a chef for almost 30 years for other people for many years, but for the last eight years for myself.”

‘For the love of food’ is Mr Brunswick’s company slogan and he believes in sourcing ingredients locally wherever possible.

Chef David Shaw prepares all the dishes from scratch on the premises.

The pub and restaurant reopened to the public on Wednesday, September 23, but the couple held a VIP night – attended by Sir John Madejski and Royals players Adam Federici, Mitchell Bryant and Jem Karacan – the previous evening offering champagne and canapés.

Mr Brunswick said: “We invited businesses from around the area and had a very successful evening.”

As well as freshly cooked stylish meals, the chef bakes a lot of the bread served in the bar and restaurant.

The pub also serves beer brewed from around the area including Ascot Ales from Camberley, Triple FFF from Alton in Hampshire and the Rebellion Brewery in Marlow.

Mr Brunswick said: “We are dedicated to using good raw materials and cooking everything fresh on the premises.

“That is what ‘for the love of food’ means to us.”

   good luck to adrian and his staff. the spring inn is pretty much a cursed establishment so they're gonna need all the luck they can get if they hope to stay open for more than 6 months!

talk about a pub in the wrong location....
